Ingredients
- Chicken wings - 500 grams
- Sichuan peppercorns - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, minced
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cornstarch - 2 tablespoons
- Vegetable oil - for frying
- Chopped green onions - for garnish
Steps
- In a spice grinder, pulse the Sichuan peppercorns until finely ground. Set aside.
- In a mixing bowl, combine the minced garlic, ginger, soy sauce, rice vinegar, honey, ground Sichuan peppercorns, salt, and black pepper to create a marinade.
- Add the chicken wings to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
- After marinating, remove the wings from the refrigerator and sprinkle cornstarch evenly over them to create a light coating.
- In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).
- Carefully add the coated wings to the hot oil in batches, frying for about 8-10 minutes or until golden brown and crispy, turning occasionally.
- Once cooked, remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve hot, garnished with chopped green onions.
