Ingredients

  • Chicken wings - 500 grams
  • Sichuan peppercorns - 1 tablespoon

  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 2 tablespoons
  • Vegetable oil - for frying
  • Chopped green onions - for garnish

Steps

  1. In a spice grinder, pulse the Sichuan peppercorns until finely ground. Set aside.
  2. In a mixing bowl, combine the minced garlic, ginger, soy sauce, rice vinegar, honey, ground Sichuan peppercorns, salt, and black pepper to create a marinade.
  3. Add the chicken wings to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  4. After marinating, remove the wings from the refrigerator and sprinkle cornstarch evenly over them to create a light coating.
  5. In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).
  6. Carefully add the coated wings to the hot oil in batches, frying for about 8-10 minutes or until golden brown and crispy, turning occasionally.
  7. Once cooked, remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Serve hot, garnished with chopped green onions.
