Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions and set aside.
  2. In a dry skillet over medium heat, toast the Sichuan peppercorns for about 2 minutes until fragrant. Remove from heat and crush them lightly using a mortar and pestle or a spice grinder.

  4. Add the diced chicken breast to the pan, cooking until browned and cooked through, about 5-7 minutes. Season with salt and black pepper.
  5. Stir in the diced bell pepper and carrot, cooking for an additional 3-4 minutes until they soften.
  6. Add the frozen peas and cooked rice to the pan, mixing well. Pour in the soy sauce and sprinkle the crushed Sichuan peppercorns over the mixture. Stir-fry for about 2-3 minutes until everything is well combined and heated through.
