Ingredients

  • Pizza dough - 200 grams
  • Sichuan peppercorns - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Mozzarella cheese - 150 grams, shredded
  • Soy sauce - 1 tablespoon
  • Chili oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a small pan, toast the Sichuan peppercorns over low heat for 2-3 minutes until fragrant, then grind them into a powder.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced red and green bell peppers, mushrooms, and spinach to the skillet. Cook for about 5-7 minutes until the vegetables are slightly softened. Season with soy sauce, chili oil, salt, and black pepper. Stir in half of the ground Sichuan pepper.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer it to a baking sheet lined with parchment paper.
  6. Spread the sautéed vegetable mixture evenly over the pizza dough, leaving a small border around the edges.
  7. Sprinkle the shredded mozzarella cheese on top of the vegetables, and finish with the remaining ground Sichuan pepper.
  8. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.
  9. Remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh cilantro before slicing and serving.
