  • Black beans - 200 grams, cooked and drained
  • Quinoa - 50 grams, cooked
  • Sichuan peppercorns - 1 teaspoon, toasted and ground
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Green onions - 2, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2, preferably whole grain
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Pickled cucumbers - 2 slices

Steps

  1. In a mixing bowl, mash the cooked black beans until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, ground Sichuan peppercorns, minced garlic, grated ginger, soy sauce, cornstarch, chopped green onions, cilantro, sesame oil, salt, and black pepper to the mashed beans. Mix well until fully combined.
  3. Form the mixture into two patties, ensuring they hold together well. If too wet, add a little more cornstarch.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and pickled cucumbers. Top with the other half of the bun.
