Ingredients

  • Sichuan noodles - 200 grams
  • Firm tofu - 200 grams, cubed
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Sichuan peppercorns - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 500 ml
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the Sichuan noodles according to package instructions, then drain and set aside.
  2. In a pan, heat the sesame oil over medium heat and add the cubed tofu. Cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  3. In the same pan, add a bit more sesame oil if needed, then add the minced garlic, grated ginger, and Sichuan peppercorns. Sauté for about 1 minute until fragrant.
  4. Add the sliced bell pepper and julienned carrot to the pan, and stir-fry for about 3-4 minutes until they start to soften.
  5. Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer.
  6. Add the cooked noodles and the browned tofu to the pan, tossing everything together gently. Drizzle with chili oil and season with salt and black pepper to taste.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Serve hot, garnished with chopped green onions and cilantro.
