Ingredients
- Sichuan noodles - 200 grams
- Firm tofu - 200 grams, cubed
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onions - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Sichuan peppercorns - 1 teaspoon
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable broth - 500 ml
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the Sichuan noodles according to package instructions, then drain and set aside.
- In a pan, heat the sesame oil over medium heat and add the cubed tofu. Cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same pan, add a bit more sesame oil if needed, then add the minced garlic, grated ginger, and Sichuan peppercorns. Sauté for about 1 minute until fragrant.
- Add the sliced bell pepper and julienned carrot to the pan, and stir-fry for about 3-4 minutes until they start to soften.
- Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer.
- Add the cooked noodles and the browned tofu to the pan, tossing everything together gently. Drizzle with chili oil and season with salt and black pepper to taste.
- Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with chopped green onions and cilantro.
