- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Garlic - 3 cloves, minced

- Sichuan peppercorns - 1 teaspoon, toasted and crushed
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Honey - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4, soaked in water for 30 minutes
Steps
- In a large bowl, combine minced garlic, minced ginger, crushed Sichuan peppercorns, cumin powder, chili powder, soy sauce, sesame oil, honey, lemon juice, salt, and black pepper to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired level of doneness.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
