Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Sichuan peppercorns - 1 teaspoon, toasted and crushed
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4, soaked in water for 30 minutes

Steps

  1. In a large bowl, combine minced garlic, minced ginger, crushed Sichuan peppercorns, cumin powder, chili powder, soy sauce, sesame oil, honey, lemon juice, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired level of doneness.
  6. Remove the kebabs from the grill and let them rest for a few minutes before serving.
