  • Chicken breast - 150 grams, thinly sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Bok choy - 100 grams, chopped
  • Zucchini - 1 medium, spiralized
  • Fish sauce - 2 tablespoons
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 5 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Chicken broth - 1 liter
  • Sesame oil - 1 tablespoon
  • Scallions - 2, chopped
  • Cilantro - 1 handful, chopped
  • Salt - to taste

Steps

  1. In a pot, heat sesame oil over medium heat and sauté minced garlic, ginger, Sichuan peppercorns, and dried red chili peppers until fragrant.
  2. Add the chicken broth to the pot and bring to a simmer.
  3. Once simmering, stir in the fish sauce and salt to taste.
  4. Prepare a hot pot or a portable burner at the dining table with the broth simmering.
  5. Arrange the sliced beef, pork, chicken, mushrooms, bok choy, and zucchini on a serving platter.
  6. Each diner can cook their desired meat and vegetables in the hot broth for 2-5 minutes, depending on preference.
  7. Once cooked, serve the hot pot ingredients garnished with chopped scallions and cilantro.
