- Halal sausage - 4 links (about 400g)
- Sichuan peppercorns - 1 teaspoon
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Brown sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
Steps
- In a small pan, dry roast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Let them cool, then grind them into a fine powder.
- In a bowl, combine the ground Sichuan peppercorns, minced garlic, minced ginger, soy sauce, chili oil, brown sugar, sesame oil, and lemon juice. Mix well to form a marinade.
- Place the Halal sausages in the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat. Remove the sausages from the marinade and let excess marinade drip off.
- Grill the sausages for about 10-12 minutes, turning occasionally, until they are nicely charred and cooked through.
- Once cooked, remove from the grill and let them rest for a few minutes. Garnish with chopped green onions and cilantro before serving.
