Ingredients

  • Halal sausage - 4 links (about 400g)
  • Sichuan peppercorns - 1 teaspoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste

Steps

  1. In a small pan, dry roast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Let them cool, then grind them into a fine powder.
  2. In a bowl, combine the ground Sichuan peppercorns, minced garlic, minced ginger, soy sauce, chili oil, brown sugar, sesame oil, and lemon juice. Mix well to form a marinade.
  3. Place the Halal sausages in the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill to medium-high heat. Remove the sausages from the marinade and let excess marinade drip off.
  5. Grill the sausages for about 10-12 minutes, turning occasionally, until they are nicely charred and cooked through.
  6. Once cooked, remove from the grill and let them rest for a few minutes. Garnish with chopped green onions and cilantro before serving.
