Ingredients

  • Whole fish (such as tilapia or trout) - 400 grams
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 5-6 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cooking oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the grill to medium-high heat.
  2. Clean and gut the fish, then make diagonal cuts on both sides of the fish for even cooking.
  3. In a dry skillet, toast the Sichuan peppercorns and dried red chili peppers over medium heat for about 2 minutes until fragrant. Remove from heat.
  4. In a bowl, mix the toasted spices with minced garlic, ginger, soy sauce, rice vinegar, sesame oil, cooking oil, salt, and black pepper to create a marinade.
  5. Rub the marinade generously over the fish, making sure it gets into the cuts. Let it marinate for 15 minutes.
  6. Place the fish on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
  7. Once cooked, remove the fish from the grill and garnish with chopped green onions and fresh cilantro before serving.
