- Dried red chili peppers - 5-6 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cooking oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the grill to medium-high heat.
- Clean and gut the fish, then make diagonal cuts on both sides of the fish for even cooking.
- In a dry skillet, toast the Sichuan peppercorns and dried red chili peppers over medium heat for about 2 minutes until fragrant. Remove from heat.
- In a bowl, mix the toasted spices with minced garlic, ginger, soy sauce, rice vinegar, sesame oil, cooking oil, salt, and black pepper to create a marinade.
