  • Sesame oil - 15ml
  • Sichuan peppercorns - 1 teaspoon (5g), crushed
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Honey - 1 tablespoon (15g)
  • Chili paste - 1 tablespoon (15g)
  • Green onions - 2 stalks, chopped
  • Toasted sesame seeds - 1 tablespoon (10g)

Steps

  1. Preheat the grill to medium heat.
  2. Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern to allow flavors to penetrate.
  3. In a bowl, mix soy sauce, sesame oil, crushed Sichuan peppercorns, minced garlic, minced ginger, honey, and chili paste to create the marinade.
  4. Brush the marinade generously over the cut sides of the eggplants, reserving some for later.
