- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped

Steps
- In a dry skillet over medium heat, toast the Sichuan peppercorns until fragrant, about 2-3 minutes. Remove from heat and grind them into a fine powder.
- In a mixing bowl, combine the ground Sichuan peppercorns, minced garlic, minced ginger, soy sauce, chili oil, honey, rice vinegar, sesame oil, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 75°C (165°F).
- Once grilled, let the chicken rest for a few minutes before slicing.
- Garnish with chopped green onions and serve hot.
