Ingredients

  • Chicken thighs - 400 grams
  • Sichuan peppercorns - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a dry skillet over medium heat, toast the Sichuan peppercorns until fragrant, about 2-3 minutes. Remove from heat and grind them into a fine powder.
  2. In a mixing bowl, combine the ground Sichuan peppercorns, minced garlic, minced ginger, soy sauce, chili oil, honey, rice vinegar, sesame oil, salt, and black pepper to create the marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 75°C (165°F).
  6. Once grilled, let the chicken rest for a few minutes before slicing.
