Ingredients

  • White fish fillets (such as tilapia or cod) - 300 grams
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 5-6, whole
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce (halal) - 2 tablespoons
  • Oyster sauce (halal) - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 3 tablespoons
  • Spring onion - 2, chopped for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Pat the fish fillets dry with paper towels and season with salt, black pepper, and cornstarch. Let them marinate for about 10 minutes.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the Sichuan peppercorns and dried red chili peppers, stir-frying for about 30 seconds until fragrant.
  3. Add the minced garlic and ginger to the skillet, stirring quickly to avoid burning, for about 30 seconds.
  4. Add the marinated fish fillets to the skillet and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the fish from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of oil and then the sliced red and green bell peppers. Stir-fry for about 3-4 minutes until they are tender but still crisp.
  6. Return the cooked fish to the skillet. Pour in the soy sauce and oyster sauce, tossing everything together to combine and heat through for an additional 2 minutes.
  7. Remove from heat, garnish with chopped spring onions, and serve immediately.
