- Red bell pepper - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Sichuan peppercorns - 1 teaspoon
- Dried red chili peppers - 5-6, whole
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce (halal) - 2 tablespoons
- Oyster sauce (halal) - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 3 tablespoons
- Spring onion - 2, chopped for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Pat the fish fillets dry with paper towels and season with salt, black pepper, and cornstarch. Let them marinate for about 10 minutes.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the Sichuan peppercorns and dried red chili peppers, stir-frying for about 30 seconds until fragrant.
- Add the minced garlic and ginger to the skillet, stirring quickly to avoid burning, for about 30 seconds.
- Add the marinated fish fillets to the skillet and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the fish from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of oil and then the sliced red and green bell peppers. Stir-fry for about 3-4 minutes until they are tender but still crisp.
- Return the cooked fish to the skillet. Pour in the soy sauce and oyster sauce, tossing everything together to combine and heat through for an additional 2 minutes.
- Remove from heat, garnish with chopped spring onions, and serve immediately.
