Ingredients

  • White fish fillets (such as cod or tilapia) - 300 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 3, whole
  • Green onions - 2, chopped (white and green parts separated)
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 500 milliliters
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)
  • Cilantro - a handful, for garnish

Steps

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the minced garlic, ginger, Sichuan peppercorns, and whole dried chilies, sautéing for about 1 minute until fragrant.
  3. Stir in the chopped white parts of the green onions, sliced bell pepper, and carrot. Cook for 3–4 minutes until the vegetables are slightly softened.
  4. Add the chopped tomato and vegetable broth to the pot, bringing it to a gentle boil.
  5. Reduce the heat and stir in the soy sauce and rice vinegar. Let the mixture simmer for 5 minutes.
  6. Carefully add the fish fillets to the pot, ensuring they are submerged in the broth. Simmer for an additional 5-7 minutes until the fish is cooked through and flakes easily.
  7. Stir in the cornstarch mixture and cook for another 2 minutes until the stew thickens slightly.
  8. Remove from heat, garnish with chopped green onions and cilantro, and serve hot.
