- Ground chicken - 300 grams
- Sichuan peppercorns - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Panko breadcrumbs - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1, thinly sliced
- Mayonnaise - 2 tablespoons
- Chili oil - 1 tablespoon
- Salt - to taste

Steps
- In a small pan, toast the Sichuan peppercorns over medium heat for 2-3 minutes until fragrant. Let them cool and then grind them into a coarse powder.
- In a large bowl, combine the ground chicken, ground Sichuan peppercorns, minced garlic, grated ginger, soy sauce, sesame oil, chopped green onions, panko breadcrumbs, salt, and pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape them into patties.
- Heat a pan over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side, or until they are fully cooked and golden brown.
- While the chicken patties are cooking, mix the mayonnaise and chili oil in a small bowl to create the chili mayo.
- Toast the burger buns lightly on the same pan until golden.
- Assemble the burger by spreading chili mayo on the bottom bun, adding a lettuce leaf, the chicken patty, tomato slices, and cucumber slices. Top with the other half of the bun.
- Serve immediately with your choice of side.
