Ingredients

  • Fresh egg noodles - 200 grams
  • Chicken breast - 200 grams, thinly sliced
  • Soy sauce - 3 tablespoons
  • Sichuan peppercorns - 1 teaspoon
  • Chili oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Bell pepper - 1, sliced
  • Carrot - 1, julienned
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Coriander - for garnish

Steps

  1. Cook the egg noodles according to package instructions until al dente, then drain and set aside.
  2. In a bowl, marinate the sliced chicken with 1 tablespoon of soy sauce, garlic, ginger, and a pinch of salt for about 10 minutes.
  3. Heat 1 tablespoon of chili oil in a large skillet or wok over medium-high heat. Add Sichuan peppercorns and sauté for 30 seconds until fragrant.
  4. Add the marinated chicken to the skillet and stir-fry for about 5-7 minutes until cooked through and slightly browned.
  5. Add the sliced bell pepper and julienned carrot to the skillet, stir-frying for an additional 3-4 minutes until vegetables are tender-crisp.
  6. In a large mixing bowl, combine the cooked noodles, remaining soy sauce, sesame oil, and the rest of the chili oil. Toss to coat the noodles evenly.
  7. Add the chicken and vegetable mixture to the noodles, tossing everything together until well combined. Adjust seasoning with salt and black pepper to taste.
  8. Serve hot, garnished with chopped green onions and fresh coriander.
