Ingredients
- Lamb shoulder - 400 grams, cut into bite-sized pieces
- Sichuan peppercorns - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Chili flakes - 1 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Green onions - 2, chopped for garnish
- Cilantro - a handful, chopped for garnish
Steps
- In a dry skillet, toast the Sichuan peppercorns and cumin seeds over medium heat until fragrant, about 2 minutes. Allow to cool, then grind them into a powder.
- In a mixing bowl, combine the ground spices with chili flakes, minced garlic, minced ginger, soy sauce, sesame oil, honey, and rice vinegar to create a marinade.
- Add the lamb pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated lamb onto skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
- Remove from the grill and let rest for a few minutes. Garnish with chopped green onions and cilantro before serving.
