Ingredients

  • Fresh whole fish (e.g., tilapia or snapper) - 400 grams
  • Sichuan peppercorns - 1 teaspoon
  • Dried red chilies - 5 whole
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Spring onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for grilling

Steps

  1. Prepare the fish by cleaning and gutting it, then score the flesh on both sides with shallow cuts to help absorb the marinade.
  2. In a small pan, dry roast the Sichuan peppercorns and dried red chilies over medium heat for 2-3 minutes until fragrant, then grind them into a powder using a mortar and pestle or spice grinder.
  3. In a bowl, combine the ground peppercorns, dried chilies, minced garlic, grated ginger, soy sauce, rice vinegar, sesame oil, salt, and black pepper to create the marinade.
  4. Rub the marinade generously over the fish, ensuring it gets into the scored cuts. Let it marinate for at least 15 minutes.
  5. Preheat the grill or a grill pan over medium-high heat and lightly brush with olive oil.
  6. Place the marinated fish on the grill and cook for 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  7. Garnish with chopped spring onions and cilantro before serving.
