- Ginger - 1 inch piece, minced
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Black sesame seeds - 1 teaspoon
- Vegetable oil - for grilling
Steps
- In a bowl, combine soy sauce, Shaoxing wine, Sichuan peppercorns, chili powder, minced garlic, minced ginger, brown sugar, and sesame oil. Mix well to create the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- Preheat a grill or grill pan over medium-high heat and lightly oil the surface to prevent sticking.
- Remove the chicken from the marinade, shaking off excess liquid, and thread the pieces onto skewers.
- Grill the chicken skewers for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
