Ingredients

  • Chicken thighs - 300 grams

  • Shaoxing wine - 1 tablespoon
  • Sichuan peppercorns - 1 teaspoon
  • Chili powder - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, minced
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Black sesame seeds - 1 teaspoon
  • Vegetable oil - for grilling

Steps

  1. In a bowl, combine soy sauce, Shaoxing wine, Sichuan peppercorns, chili powder, minced garlic, minced ginger, brown sugar, and sesame oil. Mix well to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat and lightly oil the surface to prevent sticking.
  4. Remove the chicken from the marinade, shaking off excess liquid, and thread the pieces onto skewers.
  5. Grill the chicken skewers for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
  6. Once cooked, remove from the grill and sprinkle with chopped green onions and black sesame seeds before serving.
