- Cooked rice - 300 grams (preferably day-old)
- Shrimp (peeled and deveined) - 200 grams
- Egg - 2 large
- Green onions - 2 stalks, chopped
- Carrot - 1 medium, diced
- Frozen peas - 100 grams
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Black pepper - to taste
- Salt - to taste
- Vegetable oil - 2 tablespoons
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp to the skillet and cook for about 2-3 minutes until they turn pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the diced carrot and frozen peas to the skillet, cooking for another 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet, crack the eggs into the empty space, and scramble them until fully cooked.
- Add the cooked rice to the skillet, mixing it with the vegetables and eggs. Stir well to combine.
- Return the cooked shrimp to the skillet, then add the soy sauce, sesame oil, and season with salt and black pepper to taste. Stir-fry for an additional 2-3 minutes until everything is heated through.
- Finally, stir in the chopped green onions and serve hot.
