Ingredients

  • Cooked rice - 300 grams (preferably day-old)
  • Shrimp (peeled and deveined) - 200 grams
  • Egg - 2 large
  • Green onions - 2 stalks, chopped
  • Carrot - 1 medium, diced
  • Frozen peas - 100 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - to taste
  • Salt - to taste
  • Vegetable oil - 2 tablespoons

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp to the skillet and cook for about 2-3 minutes until they turn pink and opaque. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Add the diced carrot and frozen peas to the skillet, cooking for another 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet, crack the eggs into the empty space, and scramble them until fully cooked.
  6. Add the cooked rice to the skillet, mixing it with the vegetables and eggs. Stir well to combine.
  7. Return the cooked shrimp to the skillet, then add the soy sauce, sesame oil, and season with salt and black pepper to taste. Stir-fry for an additional 2-3 minutes until everything is heated through.
  8. Finally, stir in the chopped green onions and serve hot.
