- Shirataki rice - 200 grams

- Ginger - 1 teaspoon, minced
- Bell pepper (red) - 1/2 cup, diced
- Carrot - 1/2 cup, julienned
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Frozen peas - 1/4 cup
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Drain and rinse the shirataki rice under cold water, then pat dry with a paper towel.
- Heat olive oil in a large skillet or wok over medium heat. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the diced bell pepper and julienned carrot to the skillet. Stir-fry for 3-4 minutes until they begin to soften.
- Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg until fully cooked, then mix it with the vegetables.
- Add the shirataki rice, soy sauce, sesame oil, and frozen peas to the skillet. Stir everything together and cook for another 5 minutes, allowing the rice to heat through.
- Season with salt and black pepper to taste. Stir in the chopped green onions just before serving.
