Ingredients

  • Shirataki rice - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Bell pepper (red) - 1/2 cup, diced
  • Carrot - 1/2 cup, julienned
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Frozen peas - 1/4 cup
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Drain and rinse the shirataki rice under cold water, then pat dry with a paper towel.
  2. Heat olive oil in a large skillet or wok over medium heat. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the diced bell pepper and julienned carrot to the skillet. Stir-fry for 3-4 minutes until they begin to soften.
  4. Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg until fully cooked, then mix it with the vegetables.
  5. Add the shirataki rice, soy sauce, sesame oil, and frozen peas to the skillet. Stir everything together and cook for another 5 minutes, allowing the rice to heat through.
  6. Season with salt and black pepper to taste. Stir in the chopped green onions just before serving.
  7. Serve hot, garnished with sesame seeds.
