- Shirataki noodles - 200 grams
- Firm tofu, cubed - 100 grams
- Eggs - 2 large
- Green onions, sliced - 3 stalks
- Garlic, minced - 2 cloves
- Red bell pepper, julienned - 1/2 medium
- Carrot, julienned - 1 medium
- Soy sauce - 3 tablespoons
- Fish sauce - 1 tablespoon
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
- Crushed peanuts - 2 tablespoons
- Cilantro, chopped - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the shirataki noodles under cold water and drain well, then set aside.
- In a non-stick skillet, heat sesame oil over medium heat. Add cubed tofu and sauté until golden brown, about 5 minutes.
- Add minced garlic, sliced green onions, and sauté for another 2 minutes until fragrant.
- Stir in the julienned red bell pepper and carrot, cooking for an additional 3-4 minutes until they are slightly softened.
- Push the tofu and vegetables to one side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
- Add the rinsed shirataki noodles to the skillet, followed by soy sauce, fish sauce, peanut butter, and lime juice. Toss everything together until well combined and heated through, about 3-4 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with crushed peanuts and chopped cilantro.
