Ingredients

  • Shirataki noodles - 200 grams
  • Firm tofu, cubed - 100 grams
  • Eggs - 2 large
  • Green onions, sliced - 3 stalks
  • Garlic, minced - 2 cloves
  • Red bell pepper, julienned - 1/2 medium
  • Carrot, julienned - 1 medium
  • Soy sauce - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Peanut butter - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Crushed peanuts - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the shirataki noodles under cold water and drain well, then set aside.
  2. In a non-stick skillet, heat sesame oil over medium heat. Add cubed tofu and sauté until golden brown, about 5 minutes.
  3. Add minced garlic, sliced green onions, and sauté for another 2 minutes until fragrant.
  4. Stir in the julienned red bell pepper and carrot, cooking for an additional 3-4 minutes until they are slightly softened.
  5. Push the tofu and vegetables to one side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
  6. Add the rinsed shirataki noodles to the skillet, followed by soy sauce, fish sauce, peanut butter, and lime juice. Toss everything together until well combined and heated through, about 3-4 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with crushed peanuts and chopped cilantro.
