Ingredients

  • Almond flour - 100g
  • Psyllium husk - 10g
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Egg - 1 large
  • Water - 100ml
  • Olive oil - 1 tbsp
  • Shiitake mushrooms - 150g, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 1 tbsp
  • Green onion - 2 stalks, chopped
  • Mozzarella cheese - 100g, shredded
  • Sesame oil - 1 tsp

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. Add the egg, water, and olive oil to the dry ingredients and mix until a dough forms.
  4. Roll the dough out between two sheets of parchment paper to about 1/2 cm thickness.
  5. Transfer the flatbread onto a baking tray lined with parchment paper and bake for 10 minutes, or until slightly golden.
  6. While the flatbread is baking, heat a pan over medium heat and add a splash of olive oil.
  7. Sauté the minced garlic for about 30 seconds, then add the sliced shiitake mushrooms.
  8. Cook the mushrooms for 5-7 minutes until they are soft, then add the soy sauce and stir well.
  9. Remove the flatbread from the oven, spread the sautéed mushrooms evenly over the top, sprinkle with mozzarella cheese and chopped green onions.
  10. Return the flatbread to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  11. Drizzle with sesame oil before serving.
