Ingredients
- Almond flour - 100g
- Psyllium husk - 10g
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Egg - 1 large
- Water - 100ml
- Olive oil - 1 tbsp
- Shiitake mushrooms - 150g, sliced
- Garlic - 2 cloves, minced
- Soy sauce (or tamari for gluten-free) - 1 tbsp
- Green onion - 2 stalks, chopped
- Mozzarella cheese - 100g, shredded
- Sesame oil - 1 tsp
Steps
- Preheat the oven to 200°C (390°F).
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- Add the egg, water, and olive oil to the dry ingredients and mix until a dough forms.
- Roll the dough out between two sheets of parchment paper to about 1/2 cm thickness.
- Transfer the flatbread onto a baking tray lined with parchment paper and bake for 10 minutes, or until slightly golden.
- While the flatbread is baking, heat a pan over medium heat and add a splash of olive oil.
- Sauté the minced garlic for about 30 seconds, then add the sliced shiitake mushrooms.
- Cook the mushrooms for 5-7 minutes until they are soft, then add the soy sauce and stir well.
- Remove the flatbread from the oven, spread the sautéed mushrooms evenly over the top, sprinkle with mozzarella cheese and chopped green onions.
- Return the flatbread to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Drizzle with sesame oil before serving.
