Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 3 grams
  • Ground beef (or lamb) - 150 grams
  • Green onions - 2 stalks, finely chopped
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • White pepper - 1/4 teaspoon
  • Cooking oil - 2 tablespoons
  • Chicken or beef broth - 100 ml

Steps

  1. In a mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water while mixing until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes.
  3. In another bowl, mix the ground beef, green onions, ginger, soy sauce, sesame oil, salt, and white pepper. Stir well until combined.
  4. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  5. Place 1 tablespoon of the meat filling in the center of each dough circle. Carefully pinch the edges together to seal the bun, forming a pleated top.
  6. Heat oil in a non-stick skillet over medium heat. Place the buns in the skillet, seam side down, and fry for 2-3 minutes until the bottom is golden brown.
  7. Add the broth to the skillet, cover with a lid, and steam the buns for about 8-10 minutes until cooked through.
  8. Remove the lid and continue cooking for an additional 2 minutes to crisp up the bottom. Serve hot with a dipping sauce of soy sauce and vinegar.
