- Glutinous rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Dried shiitake mushrooms - 3 pieces
- Chinese sausage (lap Cheong) - 50g, diced
- Dried shrimp - 20g, soaked in warm water
- Green onions - 2 stalks, finely chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Ginger - 1 teaspoon, minced
- Garlic - 2 cloves, minced
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Soak the dried shiitake mushrooms in warm water for about 30 minutes until softened, then slice them thinly.
- In a skillet, heat a teaspoon of sesame oil over medium heat. Add the minced ginger and garlic, sauté for 1-2 minutes until fragrant.
- Add the diced Chinese sausage and soaked dried shrimp to the skillet, cooking for another 3-4 minutes until they are slightly browned.
- Stir in the sliced mushrooms and chopped green onions, cooking for an additional 2 minutes.
- Drain the soaked rice and add it to the skillet, mixing well with the other ingredients.
- Pour in the soy sauce, salt, and black pepper, mixing thoroughly to combine all the flavors.
- Transfer the mixture to a steamer lined with parchment paper, spreading it out evenly.
- Steam the rice mixture over high heat for about 30 minutes until the rice is tender and sticky.
- Once done, remove from the steamer and let it sit for a few minutes before serving. Fluff with a fork and enjoy warm.
