Ingredients

  • Glutinous rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Dried shiitake mushrooms - 3 pieces
  • Chinese sausage (lap Cheong) - 50g, diced
  • Dried shrimp - 20g, soaked in warm water
  • Green onions - 2 stalks, finely chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ginger - 1 teaspoon, minced
  • Garlic - 2 cloves, minced

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Soak the dried shiitake mushrooms in warm water for about 30 minutes until softened, then slice them thinly.
  3. In a skillet, heat a teaspoon of sesame oil over medium heat. Add the minced ginger and garlic, sauté for 1-2 minutes until fragrant.
  4. Add the diced Chinese sausage and soaked dried shrimp to the skillet, cooking for another 3-4 minutes until they are slightly browned.
  5. Stir in the sliced mushrooms and chopped green onions, cooking for an additional 2 minutes.
  6. Drain the soaked rice and add it to the skillet, mixing well with the other ingredients.
  7. Pour in the soy sauce, salt, and black pepper, mixing thoroughly to combine all the flavors.
  8. Transfer the mixture to a steamer lined with parchment paper, spreading it out evenly.
  9. Steam the rice mixture over high heat for about 30 minutes until the rice is tender and sticky.
  10. Once done, remove from the steamer and let it sit for a few minutes before serving. Fluff with a fork and enjoy warm.
