Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water while stirring with a fork until the mixture comes together.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 10 minutes.
- Divide the dough into two equal portions. Roll each portion into a thin circle (about 20 cm in diameter).
- Brush each circle with sesame oil, then sprinkle with chopped scallions evenly. Roll the dough tightly into a log, then coil it into a spiral and flatten gently with your hand.
- Roll the coiled dough out again into a thin pancake, about 20 cm in diameter.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook each scallion pancake for 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
- In the same skillet, add the tomato sauce and spread it evenly over the pancakes. Top with sliced bell pepper, mushrooms, and fresh basil.
