Ingredients
- Gluten-free flour - 200 grams
- Warm water - 120 ml
- Salt - 1 teaspoon
- Scallions (green onions) - 100 grams, finely chopped
- Sesame oil - 2 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine the gluten-free flour and salt. Gradually add warm water while stirring until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 10 minutes.
- In a small bowl, mix the chopped scallions, sesame oil, and black pepper.
- Divide the rested dough into two equal portions. Roll each portion into a thin circle (about 20 cm in diameter).
- Spread half of the scallion mixture evenly over each dough circle, then fold the dough over to create a half-moon shape, sealing the edges.
- Heat olive oil in a skillet over medium heat. Place the folded flatbreads in the skillet and cook for about 4-5 minutes on each side until golden brown and crispy.
- Remove from the skillet and let them cool for a minute before slicing into wedges. Serve warm.
