Ingredients

  • Duck breast - 500 grams
  • Soy sauce - 60 ml
  • Hoisin sauce - 30 ml
  • Rice wine - 30 ml
  • Brown sugar - 15 grams
  • Five-spice powder - 5 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sesame oil - 10 ml
  • Spring onions - 2, chopped
  • Cilantro - 10 grams, for garnish

Steps

  1. In a bowl, mix soy sauce, hoisin sauce, rice wine, brown sugar, five-spice powder, minced garlic, grated ginger, and sesame oil to create the marinade.
  2. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
  3. Place the duck breasts in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. Preheat the oven to 200°C (392°F).
  5. Remove the duck from the marinade and place it skin-side up on a wire rack set over a baking tray.
  6. Roast the duck in the preheated oven for about 30-35 minutes, or until the skin is crispy and the internal temperature reaches 74°C (165°F).
  7. Let the duck rest for 10 minutes before slicing.
  8. Serve the sliced duck garnished with chopped spring onions and cilantro.
