  • Sesame oil - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Mozzarella cheese - 100 grams, shredded
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil leaves - a handful
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the gluten-free flour and salt. Gradually add the hot water while stirring until a dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover and let it rest for 10 minutes.
  3. Divide the dough into two equal portions. Roll out each portion into a thin circle (about 20 cm in diameter).
  4. Brush each dough circle with sesame oil and sprinkle chopped scallions evenly on top. Roll the dough tightly into a log, then coil it into a spiral and flatten it gently.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook one scallion pancake for about 4-5 minutes on each side until golden and crispy. Repeat with the second pancake.
  6. Once cooked, place each pancake on a baking tray. Preheat the oven to 200°C (390°F).
  7. Top each pancake with shredded mozzarella cheese, halved cherry tomatoes, and fresh basil leaves. Season with black pepper.
  8. Bake in the oven for 8-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a couple of minutes before slicing into wedges. Serve warm.
