- Scallions - 3, finely chopped

- Mozzarella cheese - 100 grams, shredded
- Cherry tomatoes - 100 grams, halved
- Fresh basil leaves - a handful
- Black pepper - to taste
Steps
- In a mixing bowl, combine the gluten-free flour and salt. Gradually add the hot water while stirring until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover and let it rest for 10 minutes.
- Divide the dough into two equal portions. Roll out each portion into a thin circle (about 20 cm in diameter).
- Brush each dough circle with sesame oil and sprinkle chopped scallions evenly on top. Roll the dough tightly into a log, then coil it into a spiral and flatten it gently.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook one scallion pancake for about 4-5 minutes on each side until golden and crispy. Repeat with the second pancake.
- Once cooked, place each pancake on a baking tray. Preheat the oven to 200°C (390°F).
- Top each pancake with shredded mozzarella cheese, halved cherry tomatoes, and fresh basil leaves. Season with black pepper.
- Bake in the oven for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes before slicing into wedges. Serve warm.
