Ingredients
- Quail - 4 whole (about 300g each)
- Soy sauce - 60ml
- Shaoxing wine - 30ml
- Honey - 30g
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Five-spice powder - 1 teaspoon
- Sesame oil - 1 tablespoon
- Black pepper - 1 teaspoon
- Spring onions - 2, chopped for garnish
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a bowl, combine soy sauce, Shaoxing wine, honey, minced garlic, grated ginger, five-spice powder, sesame oil, and black pepper to create the marinade.
- Place the quail in a large zip-lock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or BBQ to medium-high heat.
- Remove the quail from the marinade and let any excess drip off. Reserve the marinade for basting.
- Place the quail on the grill, breast side down, and cook for about 5-7 minutes. Flip and baste with the reserved marinade, cooking for another 5-7 minutes until they are cooked through and have nice grill marks.
- Check the internal temperature of the quail; it should reach 74°C (165°F).
- Once cooked, remove the quail from the grill and let them rest for 5 minutes.
- Garnish with chopped spring onions and sesame seeds before serving.
