- Whole fish (e.g., sea bass or tilapia) - 400 grams
- Soy sauce - 2 tablespoons
- Shaoxing wine - 1 tablespoon
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Chili paste - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped
- Lemon - 1, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Clean and gut the fish, then pat it dry with paper towels.
- In a bowl, mix soy sauce, Shaoxing wine, minced ginger, minced garlic, chili paste, vegetable oil, salt, and black pepper to create the marinade.
- Place the fish in a shallow dish and pour the marinade over it, ensuring the fish is well-coated. Cover and refrigerate for at least 15 minutes.
- Preheat the grill or grill pan over medium-high heat. Oil the grill grates lightly.
- Remove the fish from the marinade and reserve the marinade for basting. Place the fish on the grill and cook for 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
- During the last few minutes of grilling, baste the fish with the reserved marinade and add lemon slices on top.
- Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
