Ingredients

  • Whole fish (e.g., sea bass or tilapia) - 400 grams
  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Chili paste - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped
  • Lemon - 1, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Clean and gut the fish, then pat it dry with paper towels.
  2. In a bowl, mix soy sauce, Shaoxing wine, minced ginger, minced garlic, chili paste, vegetable oil, salt, and black pepper to create the marinade.
  3. Place the fish in a shallow dish and pour the marinade over it, ensuring the fish is well-coated. Cover and refrigerate for at least 15 minutes.
  4. Preheat the grill or grill pan over medium-high heat. Oil the grill grates lightly.
  5. Remove the fish from the marinade and reserve the marinade for basting. Place the fish on the grill and cook for 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. During the last few minutes of grilling, baste the fish with the reserved marinade and add lemon slices on top.
  7. Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
