- Ginger (fresh, minced) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Scallions (sliced) - 2 stalks
- Carrot (diced) - 1 small
- Peas (fresh or frozen) - 50 grams
- Salt - to taste
- Pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, heat olive oil over medium heat and add minced ginger and garlic, sautéing until fragrant, about 1 minute.
- Add the diced carrot and peas to the pot, stirring for an additional 2-3 minutes until the vegetables are slightly softened.
- Add the rinsed rice to the pot and stir to coat the grains with the oil and vegetables.
- Pour in the chicken broth, soy sauce, and sesame oil. Stir well, then bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes, or until the rice has absorbed all the liquid.
- Remove the pot from heat and let it sit, covered, for another 5 minutes to allow the rice to steam.
- Fluff the rice with a fork, season with salt and pepper to taste, and stir in the sliced scallions before serving.
