Ingredients

  • Jasmine rice - 150 grams
  • Chicken broth - 300 ml
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Ginger (fresh, minced) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Scallions (sliced) - 2 stalks
  • Carrot (diced) - 1 small
  • Peas (fresh or frozen) - 50 grams
  • Salt - to taste
  • Pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat olive oil over medium heat and add minced ginger and garlic, sautéing until fragrant, about 1 minute.
  3. Add the diced carrot and peas to the pot, stirring for an additional 2-3 minutes until the vegetables are slightly softened.
  4. Add the rinsed rice to the pot and stir to coat the grains with the oil and vegetables.
  5. Pour in the chicken broth, soy sauce, and sesame oil. Stir well, then bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes, or until the rice has absorbed all the liquid.
  7. Remove the pot from heat and let it sit, covered, for another 5 minutes to allow the rice to steam.
  8. Fluff the rice with a fork, season with salt and pepper to taste, and stir in the sliced scallions before serving.
