Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Vegetable oil - 1 tablespoon
  • Ginger - 1 teaspoon, minced
  • Garlic - 2 cloves, minced
  • Star anise - 1 whole
  • Cinnamon stick - 1 small
  • Cumin seeds - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions - 2, chopped
  • Carrot - 1 small, diced
  • Bell pepper - 1 small, diced
  • Peas - 50 grams, frozen or fresh
  • Soy sauce (gluten-free) - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the minced ginger and garlic, sautéing for about 1 minute until fragrant.
  3. Add the star anise, cinnamon stick, cumin seeds, chili flakes, and salt to the pot, stirring for another minute to release the spices' aromas.
  4. Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices for about 1 minute.
  5. Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
  6. While the rice is cooking, in a separate pan, lightly sauté the diced carrot and bell pepper for about 3-4 minutes until tender. Add the peas and cook for an additional minute.
  7. Once the rice is done, remove it from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the sautéed vegetables, chopped green onions, and gluten-free soy sauce.
  8. Serve warm and enjoy your flavorful Shaanxi Spiced Rice.
