- Jasmine rice - 150 grams
- Water - 300 ml
- Vegetable oil - 1 tablespoon
- Ginger - 1 teaspoon, minced
- Garlic - 2 cloves, minced
- Star anise - 1 whole
- Cinnamon stick - 1 small
- Cumin seeds - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Green onions - 2, chopped
- Carrot - 1 small, diced
- Bell pepper - 1 small, diced
- Peas - 50 grams, frozen or fresh
- Soy sauce (gluten-free) - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the vegetable oil over medium heat. Add the minced ginger and garlic, sautéing for about 1 minute until fragrant.
- Add the star anise, cinnamon stick, cumin seeds, chili flakes, and salt to the pot, stirring for another minute to release the spices' aromas.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices for about 1 minute.
- Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
- While the rice is cooking, in a separate pan, lightly sauté the diced carrot and bell pepper for about 3-4 minutes until tender. Add the peas and cook for an additional minute.
- Once the rice is done, remove it from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the sautéed vegetables, chopped green onions, and gluten-free soy sauce.
