  • Cauliflower - 300 grams
  • Chicken breast - 200 grams
  • Apple cider vinegar - 2 tablespoons
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Carrots - 100 grams, julienned
  • Red bell pepper - 100 grams, sliced
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Start by preparing the cauliflower rice: remove the leaves and stem from the cauliflower, then cut it into florets. Pulse in a food processor until it resembles rice.
  2. Heat the sesame oil in a large pan over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1-2 minutes.
  3. Add the sliced chicken breast to the pan, cooking until browned and cooked through, approximately 5-7 minutes.
  4. Stir in the julienned carrots and red bell pepper, and cook for another 3-4 minutes until the vegetables are tender.
  5. Add the cauliflower rice to the pan, then pour in the apple cider vinegar and coconut aminos. Stir well to combine all the ingredients.
  6. Season with salt and pepper to taste. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower rice is tender.
  7. Finally, mix in the chopped green onions before serving hot.
