- Chicken breast - 200 grams
- Apple cider vinegar - 2 tablespoons

- Green onions - 2 stalks, chopped
- Carrots - 100 grams, julienned
- Red bell pepper - 100 grams, sliced
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste

Steps
- Start by preparing the cauliflower rice: remove the leaves and stem from the cauliflower, then cut it into florets. Pulse in a food processor until it resembles rice.
- Heat the sesame oil in a large pan over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1-2 minutes.
- Add the sliced chicken breast to the pan, cooking until browned and cooked through, approximately 5-7 minutes.
- Stir in the julienned carrots and red bell pepper, and cook for another 3-4 minutes until the vegetables are tender.
- Add the cauliflower rice to the pan, then pour in the apple cider vinegar and coconut aminos. Stir well to combine all the ingredients.
- Season with salt and pepper to taste. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower rice is tender.
- Finally, mix in the chopped green onions before serving hot.
