Ingredients

  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Carrot (julienned) - 1 medium
  • Cucumber (julienned) - 1 medium
  • Scallions (sliced) - 2 stalks
  • Red chili flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Cilantro (for garnish) - a handful

Steps

  1. In a large pot, bring the vegetable broth to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes, until tender.
  2. While the noodles are cooking, heat sesame oil in a pan over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the julienned carrot and cucumber to the pan, cooking for another 3-4 minutes until just softened.
  4. Stir in the gluten-free soy sauce and red chili flakes, mixing well. Season with salt and pepper to taste.
  5. Once the noodles are cooked, drain them and add them to the pan with the vegetable mixture. Toss everything together until the noodles are well coated in the sauce.
