- Cucumber (julienned) - 1 medium
- Scallions (sliced) - 2 stalks
- Red chili flakes - 1 teaspoon

Steps
- In a large pot, bring the vegetable broth to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes, until tender.
- While the noodles are cooking, heat sesame oil in a pan over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add the julienned carrot and cucumber to the pan, cooking for another 3-4 minutes until just softened.
