  • Rice noodles - 200 grams
  • Chicken breast - 200 grams, sliced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onion - 2, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Chili paste - 1 teaspoon
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large mixing bowl, combine sliced chicken, garlic, ginger, soy sauce, sesame oil, chili paste, honey, rice vinegar, salt, and black pepper. Marinate for at least 10 minutes.
  3. Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, until fully cooked and slightly charred. Remove the chicken and set aside.
  4. In the same pan, add the sliced bell pepper and zucchini. Sauté for about 4-5 minutes until tender.
  5. Add the cooked rice noodles to the pan with the grilled vegetables and toss to combine.
  6. Add the grilled chicken back to the pan and mix everything thoroughly, adjusting seasoning with additional salt or soy sauce if needed.
  7. Serve the noodles hot, garnished with chopped green onions and fresh cilantro.
