- Chicken breast - 200 grams, sliced
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Green onion - 2, chopped
- Garlic - 3 cloves, minced

- Soy sauce (gluten-free) - 3 tablespoons
- Sesame oil - 2 tablespoons
- Chili paste - 1 teaspoon
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon

Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large mixing bowl, combine sliced chicken, garlic, ginger, soy sauce, sesame oil, chili paste, honey, rice vinegar, salt, and black pepper. Marinate for at least 10 minutes.
- Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, until fully cooked and slightly charred. Remove the chicken and set aside.
- In the same pan, add the sliced bell pepper and zucchini. Sauté for about 4-5 minutes until tender.
- Add the cooked rice noodles to the pan with the grilled vegetables and toss to combine.
- Add the grilled chicken back to the pan and mix everything thoroughly, adjusting seasoning with additional salt or soy sauce if needed.
- Serve the noodles hot, garnished with chopped green onions and fresh cilantro.
