Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
- Using a peeler or julienne slicer, thinly slice the carrot, red bell pepper, and cucumber into matchstick shapes.
- In a large mixing bowl, combine the spiralized zucchini, sliced carrot, bell pepper, and cucumber.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, salt, and pepper to create the dressing.
