Ingredients

  • Zucchini - 2 medium (about 300g)
  • Carrot - 1 medium (about 60g)
  • Red bell pepper - 1 small (about 100g)
  • Cucumber - 1 small (about 100g)
  • Green onions - 2 stalks
  • Sesame oil - 2 tablespoons (30ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Sesame seeds - 1 tablespoon (10g)
  • Fresh cilantro - 2 tablespoons (chopped)
  • Salt - 1/4 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
  2. Using a peeler or julienne slicer, thinly slice the carrot, red bell pepper, and cucumber into matchstick shapes.
  3. In a large mixing bowl, combine the spiralized zucchini, sliced carrot, bell pepper, and cucumber.
  4. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, salt, and pepper to create the dressing.
  5. Pour the dressing over the vegetable mixture and toss well to combine.
  6. Sprinkle sesame seeds and chopped cilantro on top before serving.
