- Fresh spinach - 200 grams
- Cooked quinoa - 100 grams
- Sesame seeds - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onions - 2, finely chopped
- Soy sauce - 1 tablespoon
- Chili paste - 1 teaspoon
- Bread crumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons (for frying)
- Burger buns - 2
- Cucumber - 1/2, thinly sliced
- Fresh cilantro - a handful, for garnish
Steps
- In a large pan, sauté minced garlic and chopped green onions in 1 tablespoon of vegetable oil over medium heat until fragrant, about 2 minutes.
- Add fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, cooked quinoa, sesame seeds, soy sauce, chili paste, bread crumbs, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties using your hands.
- In the same pan, heat the remaining tablespoon of vegetable oil over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Toast the burger buns lightly in the pan for about 1-2 minutes.
- Assemble the burgers by placing a spinach patty on each bun, topped with sliced cucumber and fresh cilantro.
