- Whole wheat flour - 200 grams
- Warm water - 100 ml
- Instant yeast - 5 grams
- Maple syrup - 10 grams
- Salt - 3 grams
- Fresh spinach - 150 grams
- Sesame oil - 15 ml
- Garlic - 2 cloves, minced
- Soy sauce - 10 ml
- Sesame seeds - 20 grams
- Cucumber - 50 grams, sliced
- Carrot - 50 grams, shredded
- Vegan mayo - 20 grams
Steps
- In a mixing bowl, combine whole wheat flour, instant yeast, maple syrup, and salt. Gradually add warm water and knead until a smooth dough forms.
- Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
- While the dough is rising, heat sesame oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add fresh spinach to the pan and sauté until wilted. Stir in soy sauce and cook for another 2 minutes. Remove from heat and let cool.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a flat disc.
- Place a spoonful of the spinach mixture in the center of each disc. Fold the dough over to encase the filling and pinch to seal.
- Flatten the filled buns slightly and sprinkle sesame seeds on top. Place them on a parchment-lined baking tray.
- Let the buns rest for another 10 minutes while you preheat the steamer.
- Steam the buns for about 15 minutes until fluffy and cooked through.
- Serve the buns warm, topped with cucumber slices, shredded carrot, and a dollop of vegan mayo.
