Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 100 ml
  • Instant yeast - 5 grams
  • Maple syrup - 10 grams
  • Salt - 3 grams
  • Fresh spinach - 150 grams
  • Sesame oil - 15 ml
  • Garlic - 2 cloves, minced
  • Soy sauce - 10 ml
  • Sesame seeds - 20 grams
  • Cucumber - 50 grams, sliced
  • Carrot - 50 grams, shredded
  • Vegan mayo - 20 grams

Steps

  1. In a mixing bowl, combine whole wheat flour, instant yeast, maple syrup, and salt. Gradually add warm water and knead until a smooth dough forms.
  2. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  3. While the dough is rising, heat sesame oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add fresh spinach to the pan and sauté until wilted. Stir in soy sauce and cook for another 2 minutes. Remove from heat and let cool.
  5. Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a flat disc.
  6. Place a spoonful of the spinach mixture in the center of each disc. Fold the dough over to encase the filling and pinch to seal.
  7. Flatten the filled buns slightly and sprinkle sesame seeds on top. Place them on a parchment-lined baking tray.
  8. Let the buns rest for another 10 minutes while you preheat the steamer.
  9. Steam the buns for about 15 minutes until fluffy and cooked through.
  10. Serve the buns warm, topped with cucumber slices, shredded carrot, and a dollop of vegan mayo.
