- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice and 300 milliliters of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the rice is tender.
- In a large skillet, heat 2 tablespoons of sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the diced carrot and bell pepper to the skillet and stir-fry for 5-7 minutes until slightly tender.
- Once the vegetables are cooked, add the cooked jasmine rice to the skillet, followed by the soy sauce, chopped green onions, sesame seeds, salt, and black pepper. Mix thoroughly to combine all ingredients.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Serve hot, garnished with extra green onions and sesame seeds if desired.
