- Jasmine rice - 150 grams
- Water - 300 milliliters
- Sesame oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Carrot - 1 small, diced
- Green bell pepper - 1 small, diced
- Snow peas - 100 grams, trimmed
- Soy sauce - 2 tablespoons
- Scallions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water, bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.
- While the rice is cooking, heat the sesame oil in a large skillet over medium heat.
- Add the minced garlic and ginger to the skillet, sautéing for 1-2 minutes until fragrant.
- Stir in the diced carrot and green bell pepper, cooking for about 3-4 minutes until they begin to soften.
- Add the snow peas and sauté for another 2-3 minutes until they are bright green and tender-crisp.
- Fluff the cooked rice with a fork and add it to the skillet with the sautéed vegetables.
- Pour in the soy sauce, and season with salt and black pepper to taste. Stir well to combine all ingredients.
- Garnish the dish with chopped scallions and sesame seeds before serving.
