Ingredients

  • Egg noodles - 200 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the julienned carrot and sliced red bell pepper to the skillet, stirring frequently for 3-4 minutes until they start to soften.
  4. Add the drained noodles to the skillet along with the soy sauce, chopped green onion, salt, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
  5. Remove the skillet from heat and add the julienned cucumber, tossing gently to combine.
  6. Serve the noodles warm, garnished with toasted sesame seeds.
