  • whole wheat pizza dough - 200 grams
  • spaghetti or udon noodles - 100 grams
  • soy sauce - 2 tablespoons
  • sesame oil - 1 tablespoon
  • peanut butter - 2 tablespoons
  • maple syrup - 1 tablespoon
  • lime juice - 1 tablespoon
  • garlic - 1 clove, minced
  • ginger - 1 teaspoon, grated
  • red bell pepper - 1/2, thinly sliced
  • carrot - 1 medium, julienned
  • cucumber - 1/2, thinly sliced
  • scallions - 2, chopped
  • sesame seeds - 1 tablespoon
  • fresh cilantro - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to fit a pizza stone or baking sheet.
  3. Boil a pot of water and cook the spaghetti or udon noodles according to package instructions, then drain and set aside.
  4. In a bowl, mix together the soy sauce, sesame oil, peanut butter, maple syrup, lime juice, minced garlic, and grated ginger to create a sauce.
  5. In a large mixing bowl, combine the cooked noodles with half of the sauce, ensuring they are well-coated.
  6. Spread the noodle mixture evenly over the prepared pizza dough.
  7. Arrange the sliced red bell pepper, julienned carrot, and cucumber on top of the noodle layer.
  8. Drizzle the remaining sauce over the vegetables and sprinkle with sesame seeds.
  9. Bake the pizza in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
