Ingredients

  • Eggplant - 300 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon, toasted
  • Spring onions - 2, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat a grill or a grill pan over medium heat.
  2. Wash the eggplant and cut it into 1-inch thick slices.
  3. In a bowl, mix sesame oil, soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, red chili flakes, salt, and pepper to create the marinade.
  4. Add the eggplant slices to the marinade and let them soak for at least 10 minutes.
  5. Place the marinated eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have grill marks.
