- Chicken breast - 300 grams, cut into bite-sized pieces
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Bell pepper - 1 medium, sliced
- Broccoli florets - 100 grams
- Carrot - 1 medium, julienned
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the chicken pieces with soy sauce, sesame oil, and cornstarch. Mix well and allow to marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the sliced bell pepper, broccoli florets, and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
- Return the cooked chicken to the skillet, and toss everything together. Add salt and black pepper to taste. Stir-fry for an additional 2 minutes to heat through.
- Remove from heat, sprinkle with toasted sesame seeds and sliced green onions before serving.
