Ingredients

  • Rice paper wrappers - 8 sheets
  • Shrimp - 150 grams, peeled and deveined
  • Cooked crab meat - 100 grams
  • Rice vermicelli noodles - 50 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Lettuce leaves - 4 large leaves
  • Soy sauce - 30 ml
  • Lime juice - 15 ml
  • Chili sauce - 10 ml (optional)

Steps

  1. Prepare the rice vermicelli noodles according to package instructions. Drain and set aside.
  2. In a pot of boiling water, cook the shrimp for about 2-3 minutes until pink and opaque. Drain, cool, and chop into smaller pieces.
  3. In a bowl, combine the cooked shrimp, crab meat, rice vermicelli noodles, carrot, cucumber, red bell pepper, cilantro, and mint. Mix gently and set aside.
  4. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until softened, then lay it flat on a clean surface.
  5. Place a lettuce leaf on the lower third of the rice paper. Add a couple of tablespoons of the seafood mixture on top of the lettuce.
  6. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a spring roll. Repeat with the remaining wrappers and filling.
  7. In a small bowl, mix soy sauce, lime juice, and chili sauce to create the dipping sauce.
  8. Serve the spring rolls chilled with the dipping sauce on the side.
