Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Firm white fish (like cod) - 150 grams, cut into cubes
  • Red bell pepper - 1, cut into squares
  • Green bell pepper - 1, cut into squares
  • Zucchini - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, combine soy sauce, sesame oil, lemon juice, honey, minced garlic, grated ginger, salt, and black pepper to create the marinade.
  2. Add the shrimp and fish cubes to the marinade, mixing well to coat. Let them marinate for at least 15 minutes.
  3. While the seafood is marinating, prepare the vegetables by cutting them into bite-sized pieces.
  4. Thread the marinated shrimp, fish, and vegetables onto the skewers, alternating between the seafood and veggies.
  5. Preheat a grill or grill pan over medium heat. Once hot, place the skewers on the grill.
  6. Cook for about 3-4 minutes on each side, or until the shrimp are pink and opaque, and the fish is cooked through.
  7. Remove from the grill and serve warm with any leftover marinade as a dipping sauce.
