Ingredients

  • Shrimp - 100 grams, peeled and deveined
  • Calamari - 100 grams, cleaned and sliced
  • Scallops - 100 grams, cleaned
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Green onion - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.
  2. In the same pot, add the calamari and scallops. Cook for 2-3 minutes until opaque. Drain and set aside to cool.
  3. In a large bowl, combine the cucumber, carrot, red bell pepper, green onion, and cilantro.
  4. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, salt, and black pepper to create the dressing.
  5. Add the cooled seafood to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
  6. Sprinkle with toasted sesame seeds before serving.
