- Shrimp - 100 grams, peeled and deveined
- Calamari - 100 grams, cleaned and sliced
- Scallops - 100 grams, cleaned
- Cucumber - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Green onion - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Sesame oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.
- In the same pot, add the calamari and scallops. Cook for 2-3 minutes until opaque. Drain and set aside to cool.
- In a large bowl, combine the cucumber, carrot, red bell pepper, green onion, and cilantro.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, salt, and black pepper to create the dressing.
- Add the cooled seafood to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
- Sprinkle with toasted sesame seeds before serving.
