Ingredients

  • Arborio rice - 150g
  • Fish stock - 500ml
  • Fresh shrimp - 100g, peeled and deveined
  • Squid - 100g, cleaned and sliced
  • Scallops - 100g, cleaned
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Spring onions - 2, chopped
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Butter - 20g
  • Black pepper - to taste
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. In a saucepan, heat the fish stock over low heat and keep it warm.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the Arborio rice to the pan, stirring to coat the grains with the oil, and cook for about 2 minutes until slightly translucent.
  4. Pour in the soy sauce and mirin, stirring to combine, then slowly add one ladle of warm fish stock to the rice. Stir frequently until the liquid is absorbed.
  5. Continue adding the stock, one ladle at a time, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.
  6. In the last 5 minutes of cooking, add the shrimp, squid, and scallops to the risotto, stirring gently to combine, and season with salt and black pepper to taste.
  7. Once the seafood is cooked through and the rice is creamy, remove from heat and stir in the butter for added richness.
  8. Garnish with chopped spring onions and fresh coriander before serving.
