- Arborio rice - 150g
- Fish stock - 500ml
- Fresh shrimp - 100g, peeled and deveined
- Squid - 100g, cleaned and sliced
- Scallops - 100g, cleaned
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Spring onions - 2, chopped
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Olive oil - 2 tablespoons
- Butter - 20g
- Black pepper - to taste
- Salt - to taste
- Fresh coriander - for garnish
Steps
- In a saucepan, heat the fish stock over low heat and keep it warm.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add the Arborio rice to the pan, stirring to coat the grains with the oil, and cook for about 2 minutes until slightly translucent.
- Pour in the soy sauce and mirin, stirring to combine, then slowly add one ladle of warm fish stock to the rice. Stir frequently until the liquid is absorbed.
- Continue adding the stock, one ladle at a time, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.
- In the last 5 minutes of cooking, add the shrimp, squid, and scallops to the risotto, stirring gently to combine, and season with salt and black pepper to taste.
- Once the seafood is cooked through and the rice is creamy, remove from heat and stir in the butter for added richness.
- Garnish with chopped spring onions and fresh coriander before serving.
