Seafood Pancakes

- all-purpose flour - 100 grams
- cornstarch - 30 grams
- cold water - 150 milliliters
- egg - 1 large
- shrimp, peeled and deveined - 100 grams
- scallops, diced - 100 grams
- green onions, finely chopped - 2 tablespoons
- fresh cilantro, chopped - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- sesame oil - 1 tablespoon
- vegetable oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, and salt.
- In another bowl, whisk together the cold water, egg, and black pepper until well combined.
- Gradually add the wet mixture to the flour mixture, stirring until a smooth batter forms.
- Fold in the shrimp, scallops, green onions, and cilantro into the batter.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Once the oil is hot, pour half of the batter into the skillet, spreading it out evenly to form a pancake.
- Cook for about 3-4 minutes until the bottom is golden and crispy, then flip and cook for another 3-4 minutes.
- Remove the pancake and keep it warm; repeat the process with the remaining batter.
- Serve the seafood pancakes hot, drizzled with sesame oil.
