Ingredients
- Cooked jasmine rice - 2 cups
- Shrimp, peeled and deveined - 100 grams
- Squid, cleaned and sliced - 100 grams
- Eggs - 2 large
- Frozen peas - 50 grams
- Carrot, diced - 50 grams
- Green onions, chopped - 2 stalks
- Garlic, minced - 2 cloves
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the shrimp and squid to the pan and cook for 2-3 minutes until they turn opaque and are cooked through. Remove seafood from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil and the diced carrot. Sauté for 2 minutes.
- Push the vegetables to one side of the pan and crack in the eggs. Scramble the eggs until fully cooked.
- Add the cooked jasmine rice to the pan and mix everything together. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
- Add the frozen peas, cooked seafood, soy sauce, sesame oil, salt, and black pepper to the rice mixture. Stir-fry for another 2-3 minutes until everything is heated through.
- Finally, mix in the chopped green onions and cook for an additional minute.
