Ingredients

  • Cooked jasmine rice - 2 cups
  • Shrimp, peeled and deveined - 100 grams
  • Squid, cleaned and sliced - 100 grams
  • Eggs - 2 large
  • Frozen peas - 50 grams
  • Carrot, diced - 50 grams
  • Green onions, chopped - 2 stalks
  • Garlic, minced - 2 cloves
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the shrimp and squid to the pan and cook for 2-3 minutes until they turn opaque and are cooked through. Remove seafood from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of vegetable oil and the diced carrot. Sauté for 2 minutes.
  5. Push the vegetables to one side of the pan and crack in the eggs. Scramble the eggs until fully cooked.
  6. Add the cooked jasmine rice to the pan and mix everything together. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
  7. Add the frozen peas, cooked seafood, soy sauce, sesame oil, salt, and black pepper to the rice mixture. Stir-fry for another 2-3 minutes until everything is heated through.
  8. Finally, mix in the chopped green onions and cook for an additional minute.
